With Winter setting in in Melbourne we are turning more than ever to foods that will boost our immune system and warm us up!
My Pumpkin Soup is full of Vitamin C loaded veggies and super easy! All measurements are rough, feel free to add in your favourite veg! The below is my favourite combination but I've also added roasted red capsicum, potato and a bit of onion and garlic before and they were winners too!
1 sweet potato
Chicken stock to cover vegetables
Squeeze of orange
Cut all veggies roughly and fry off in a bit of olive oil until slightly tender. Cover with chicken stock and simmer until veggies are tender. Remove from heat and blend with a stick blender or use a Thermomix. finally add a squeeze of juice from an orange. Enjoy! Suitable also to portion and freeze.
